Charcoal vs Gas: Why We Grill Over Coal
The difference you can taste in a tikka, and what the grill master is actually doing.

Radiant heat and dripping fat
Charcoal burns hotter at the surface and throws radiant heat that sears the outside of a boti before the inside dries. Fat and marinade drip onto the coals, vaporise, and rise back as smoke that coats the meat. Gas burns cleaner and cooler, so the meat cooks but does not taste of fire.
Managing the fire

What it means for your order
Charcoal grilling is slower and done in batches. That is why BBQ arrives in waves and why pre-ordering a large platter makes a real difference.
Questions people ask
- Is charcoal BBQ healthier?
- It is not about health; it is about flavour. Fat renders out either way.
- Why is my boti sometimes darker than last time?
- Live fire varies. Darker edges mean a hotter batch of coals, not a different recipe.
