What is Matka Sajji?
Mutton sealed in a clay pot and left alone with the heat.
· 3 min read
The clay pot
A matka is an unglazed clay pot. Marinated mutton is packed inside, the mouth is sealed with dough or a lid, and the pot sits in embers or a low oven for hours. The meat steams and roasts at once in its own juices.
Why it tastes the way it does
No water is added. Everything in the pot comes from the meat, the fat and the marinade, so the flavour is dense. Clay also breathes a little, giving a faint earthy note.

Ordering
Sold by the kilogram. A kilo feeds three to four adults as the centrepiece. Pre-order; it is not a quick dish.
