Mild Dishes for Sensitive Palates

Pakistani food is not all fire. Here are the dishes built on cream, stock and black pepper instead of chilli.

· 3 min read

The naturally mild dishes

White karahi (chicken or mutton) is cooked with yoghurt, cream and green chilli; it is fragrant rather than hot. Mutton rosh has no chilli at all. Afghani pulao is sweet-savoury. Malai boti and malai pieces are creamy.

Dishes that can be toned down

Handi, qorma and biryani can all be ordered with less chilli. Lahori karahi and tikka boti are built around chilli and are harder to make mild without changing the dish.

At the table

Raita, plain yoghurt and a cold drink all calm heat. Bread absorbs more chilli than rice does, so eat gravies with naan if you are sensitive.
