Biryani Etiquette and Other Table Customs
Unwritten rules of a Punjabi dinner table, for guests who want to get it right.

Biryani is not a side
Do not order biryani as the rice for a karahi. It is a complete dish with its own seasoning; serve it alongside the karahi, not under it. Plain rice or naan is the proper vehicle for gravy.
Sharing dishes
Karahi, handi and sajji arrive in the middle of the table. Take from the side nearest you. Boti and kababs are passed around; it is normal to count pieces so everyone gets a fair share.

Bread and hands
Eating with the right hand and torn naan is perfectly good manners. Spoons are provided and nobody minds either way.
Tea at the end
Dinner ends with tea, not coffee. Order it after dessert, not with the meal.
